How many people will have noticed that the the wonderful recipe for Boeuf a la Flammande from the first book is missing, I wonder? In her introduction, Jocasta Innes does mention that there was a demand for many of her original recipes from the 1970s ( "axed for various reasons") to be reinstated, but sadly this one didn't make it into the current edition.


I used this cookbook when I was first married and still have it, minus the cover and a couple of pages. The wonderful thing about it is that it gradually trains you to cook sensibly, finding ways of using up odd ingredients and not wasting food, which is important for us all, but particularly vital for the young and penniless.Favourites: Alsatian onion tart,onion bacon and potato hotpot, pork and beans, (slightly) curried chicken ragout, and the salmon souffle.


I bought the 1st edition of this book in 1971 and fed my 3 growing boys, plus countless unexpected hordes of visitors to our remote farmhouse!
It is still my favourite cookbook and I invested in the lastest version when my original copy finally fell apart! I expect to feed my 5 grandchildren with some of these tried and tested recipes over Xmas 2009!
Jocasta's Fish Pie has been a top favourite over the last 30 years - it never lets me down!!
Poor or not, this book could well be the only cookbook you will ever need.


I've had my copy of this book for well over twenty years now, it's much-thumbed with yellowing pages and interesting stains from various ingredients. Having just posted a negative review of India Knight's The Thrift Book I wondered if this infinitely superior guide to economising was still in print. And it is! Many of the recipes in this book have become family favourites. I particularly recommend the bacon, onion and apple fry-up which works well with sausages too. (Fry bacon, chopped apple and onion together. That's it. Delicious.)

This is a book which would make a great gift for anyone wanting to move away from convenience foods and into 'real cooking' but who isn't sure to go about it. The food in these pages is economical but above all it is TASTY. It's food that won't drive you nuts as you prepare it, using straightforward methods and equipment. I cannot recommend this highly enough.


My Aunt gave me her old copy of the Pauper's Cookbook when I first left home for University and I have to say it was the best 'leaving gift' I could have been given. First and foremost, the book is very practical, teaching the reader the essentials of cooking and how to make the most out of the ingredients that you have to make nutritious meals that won't go to waste. From the way it's written, it's easy to see that it was primarily aimed at the novice housewife, but I think that it's equally relevant for people leaving the nest for the first time to live on their own or go to University.

You won't find fancy ways of doing beans on toast in The Paupers Cookbook, but you will find really good tips such as how to cook a meatloaf, then turn it into a spaghetti bolognaise, cottage pie etc. Looking at cooking in this really practical, thrifty and nutritious way really does help to build great foundations for a lifetime of good eating.
